WThis is a home-style take on a beverage from our latest cocktail list. This is a large-volume premix that is loaded full of essence of a festive period, which makes it excellent for your festive gathering. Reserve the remaining cordial for brunch beverages, desserts, or to mix more rounds of the drink.
Bikini Recipe
Makes enough for 10 guests
To make the Citrus Syrup (yields 750ml)
300ml newly squeezed clementine juice
200ml recently pressed lemon juice
500g fine sugar
Ingredients for the Cocktail (yields 850ml, enough for 10)
400ml good quality vodka
100ml London dry gin
150ml peach schnapps
200ml citrus syrup (as made above)
A few cranberries, to garnish
Mandarin essential oil, for finishing
Instructions
For the Cordial: Combine the listed components in a pot, heat until it reaches a simmer, agitating to dissolve. After that, turn off the heat and leave to cool entirely. Pour into an clean bottle, seal keeping it in the fridge, it will last for up to one month.
For the Batch Mix: Mix every liquid ingredients into a large bottle, leave to sit for an hour, then filter it best through muslin, to ensure it's perfectly clear.
To serve: Add 85ml of your premix into a stirring glass containing ice, and agitate lightly for a minute to chill. Pour to a frosted cocktail glass or a similar vessel, top with some cranberries and finish by giving it a light spray of the essential oil above the glass.
